IMPORTANT CHEESE PRODUCERS in SPAIN



ARTE SERANA

Torta de la Serena is made from the whole thick raw milk of the merino sheep. It is coagulated with vegetable rennet (Cynara cardunculus). Very buttery, thick, spreadable texture. Full flavor on the palate with underlying tart flavor and aroma of sheep's milk.

CAMPO REAL

This pasteurized sheep's milk cheese has a strong and intense taste a buttery, piquant touch with notable persistence on the palate.

COINGA

Made in Menorca (Balearic Islands) with Menorquina and Frisona cow's milk. Enzymatic coagulation and pressed paste, not cooked. It has a square shape and a yellowish orange colored rind. This cheese has a sharp, milky and damp, slightly acid and salty flavor.


GARCIA BAQUEIRO

Gran Maestre has an intense taste, penetrating aroma with all the nuances of the best sheep's milk. Made with 100% pasteurized "manchega" sheep's milk. This is a 6 months aged Manchego. García Baquero Ibérico has the full-bodied rounded taste of a well-matured cheese. Pressed texture cheese made with pasteurized sheep, goat and cow milk. This award winning cheese is a 6 months aged blended cheese.

MONTESINOS

Drunken Goat is a semi-soft goat cheese, from the village of Jumilla, soaked in Doble Pasta wine (Mourvedre grape) for 72 hours. Aged for roughly 75 days, it has a sweet, smooth flavor. Naked Goat is a fabulous goat cheese produced with raw milk and aged for 6 months. The flavor is rich and full with creaminess and a touch of tanginess in the finish.


RENE PICOT

Señorio de Montelarreina is a long ripened sheep's milk cheese (minimum 10 months), that has been awarded numerous prizes including Gold Medal in the World Championship Cheese Contest, Wisconsin, March 2006. Reny Picot Ibérico is a short ripened cheese with creamy texture but of pronounced flavor due to the mix of milks: 70% from goat and sheep and 30% from cow.

ROCINANTE

Maese Miguel made from Manchega´s sheep's milk is a slightly piquant cheese, dry on the palate with a fine, lingering aftertaste. Super Rocinante is a sheep's milk cheese hand rubbed with oil, covered with rosemary and aged in caves. A full bodied complex cheese.  

SAT GANADEROS DE FUERTVENTURA

Maxorata is a Majorero cheese produced in Fuerteventura (Canary Islands) with pasteurized milk from the Majorera goat. This cheese has a creamy, smooth and lactic taste with light goat tones.El Tofio produced with goat's milk from the Canary Islands is coated in natural paprika. It is creamy, smooth, slightly piquant with a sweet taste of goat's milk.
